Chocolate Eclair Cake

2 small packages of instant vanilla pudding
3 cups of milk
1 16 oz. container of Cool Whip
1 box of graham crackers
1 can of chocolate frosting
In a large mixing bowl, combine the dry pudding mix with 3 cups of milk. Mix thoroughly with a whisk or hand mixer. Next, fold in the Cool Whip. In a 9x13 inch casserole dish, put one layer of graham crackers. Then, top the graham crackers with half of the pudding mixture. Put another layer of graham crackers, and then the remaining pudding mixture. Top the dessert with one final layer of graham crackers. Next, melt the can of chocolate frosting in the microwave (usually takes one minute). Be sure to remove the foil seal covering the frosting first. Carefully pour the melted frosting over the top layer of graham crackers. Chill the dessert in the refrigerator for at least 3 hours (or until firmly set).
This is good and easy dish to make the night before a party or get together. The dish is not overly sweet for those who don't have a huge sweet tooth. It's a creamy dessert and an amazing flavor.
